Paper Title
Antibacterial Activities of Thai Herb Extracts Against Spoilage Bacteria

Abstract
The antibacterial activities of ethanol, dichloromethane and hexane extracts of three Thai herbs (Cyperusrotundus, Entadaphaseoloides, and AlbizziaOdoratissima) against Escherichia coli and Staphylococcus aureus were determined by broth dilution assay. The total phenolic contents of these herbs extracted by ethanol were evaluated using the Folin- Ciocalteu assay. Cyperusrotundus had the highest total phenolic contents, followed by AlbizziaOdoratissima and Entadaphaseoloides. The ethanol extracts of all herbs displayed activity against both of the bacteria tested. Staphylococcus aureus was more sensitive than E. coli to all solvent extracts. The ethanol extract of Cyperusrotundus showed highest activity against both pathogens. The extracts of the Thai native herbs examined in this study have potential for application in foods. Keywords: Cyperusrotundus, Entadaphaseoloides, AlbizziaOdoratissima, antibacterial activity
